I'm something of a Chips and Salsa connoisseur, probably because I am obsessed with Mexican food and spend far too much time at Chuy's.
For those times you when you're indulging at home, I've got a KILLER salsa recipe for you. This is one of the easiest things you'll ever make in the kitchen and it is perfect for entertaining.
2 8oz cans fire-roasted tomatoes
1/2 medium peeled onion
2 cloves peeled garlic
1 jalapeno, slice off the stem
1/4 cup cilantro
1 teaspoon salt
Drain the tomatoes as thoroughly as possible. Into the blender, dump ONE can of tomatoes, lime juice, onion, garlic, jalapeno, cilantro and salt. Pulse on high until everything is very finely chopped. Then add the remaining can of tomatoes and blitz BRIEFLY. Add more salt to taste.
Feel free to use more or less jalapeno. Each pepper's level of capsaicin can vary drastically, so always taste before serving and adjust to preference.
Variations: Try adding roasted peppers or corn. This is also good with pineapple and mango for a sweeter salsa.
Every single time we have friends over, I make this salsa. It is such a quick appetizer and they literally gobble it up, We never have leftovers, like ever!
